Rosalie is neither a former French cancan dancer, nor a Montmartre myth.
She just was a fabulous cook.
But she also was the great grand mother of Le Bouclard current owner: Michel Bonnemort. Though she died in 1943, she is responsible for the style of cooking adopted at le Bouclard: Through her know-how and recipes, she is still alive. Michel, her great grand son, is repeating several of her dishes over and over. Rosalie would welcome her guests where she used to live: in her kitchen, located in Lannemezan (Hautes Pyrénées, South West of France). She cooked with farm products, in the region's traditional style. Rosalie transmitted her passion to her daughter, Michel's Grand mother, as a tribute to Rosalie, Michel has labeled is cooking style "la Cuisine Grand-mère" (Grand-Mother Cooking) for the pleasure of his patrons.
